A Meal in a Box

We dined on one of the meals from the birthday present box last night. It contained potatoes, shredded greens, garlic, pork steaks, squares of strong Cheddar and a pot of onion marmalade made by Tracklements, the top notch pickle company. All the ingredients were good and the recipe sheet had a colour picture and clear instructions.

To be honest, I could have sourced the ingredients and made pork steaks with cheese and onion topping with potato wedges and garlic greens without the instructions. However, after weeks of lockdown it’s comforting to be given a meal that hasn’t taken a lot of thought. More to the point, it’s nice to have something different too. We have been getting very dull with our menu. It’s also nice to have something a bit more tasty than usual – I wouldn’t have added the onion marmalade and cheese if I’d been left to my own devices.

Tomorrow we will be having the meatballs with roast broccoli and cheesy mash. The same comments apply. I’d have used ready-made meatballs if left to my own devices, and I’d just have used beef with bread crumbs made from leftover crusts. The kit includes beef and pork mince (in two different packs) and a pack of panko breadcrumbs. It’s a much more elegant way to live.

If I was younger, and had a proper job, I would seriously consider buying a box every week. The quality of ingredients is good, the presentation is good and the result was good. However, I’m one of those old dogs that can’t learn new tricks. Apart from the question of buying a food kit that includes bits I don’t want (like all the cheese) there is the question of ordering things over a week in advance and having to be around to accept a delivery. They had some good ice packs in the box but minced meat and summer heat can be tricky.

It’s meant to be meatballs – I really must work on my presentation.

Tonight we had the meatballs. It’s the first time I’ve used panko breadcrumbs and they were (a) dry and (b) pointless. I can’t see that they were any better than ordinary breadcrumbs for making meatballs. I have no doubt they are better for some things, but I’m not sure you need them in meatballs.

I just looked them up, and added the link, and see that they absorb less fat when being fried. If that’s a concern, I would have thought the easiest way to cut the fat would be to stop adding cheese to everything.

Tonight’s meal – meatballs with cheese mash and roasted broccoli was very nice but, to be honest, making meatballs does involve a bit more standing than I would have liked. The meal was, I think, tastier than last night’s meal, but the instruction sheet was less clear.

Having said that, they have both been excellent.

The only drawback is the aggressive marketing campaign of the company, which made me sign up for regular deliveries just to redeem the gift voucher, and which made it difficult to cancel. They have already invited me to give them another chance three times.

It has, however, persuaded me that I must start making my own meatballs again. They are so much better than the bought ones, though the bought ones are good because they keep well, which is important in lockdown.

A Woman Full of Surprises

Even after knowing each other for 40 years Julia still has the capacity to surprise me.

She knitted a teddy bear yesterday. This was a surprise, as she has not knitted for years. Crochet embroidery and felting, yes, but no knitting. OK, it’s not a great surprise , but I#m building up to the big one.

Today she went out for some fresh air and came back with fish and chips. This was a surprise as I didn’t know the chip shop had reopened. Nor did I realise we were going to have something nice for tea, when I’d been expecting another meal of vegetables. It’s not the freedom I’m missing during lockdown, but the variety of food we used to eat. You have to queue outside and order from the open door.

It’s our first take-away since the disastrous KFC. That’s nearly six weeks ago. In normal times I would probably have used KFC and Just Eat several times, so I’m happy to report they have lost some business over the mess. ASDA will be losing some too. In these days, when customer service means nothing, and people never get back to you about complaints, this seems to be the best you can do to.

When you used to have to write in with complaints they used to take things more seriously. Now that they do it all by email it’s easier but also easier to write an anodyne and meaningless reply.

I think I may write another complaint and see if anything happens.

Lockdown Diaries

My diary for yesterday – 29 April 2020. I’m writing it in the early hours of the next day after a full day of loafing. I thought I’d have a go at writing a diary so I can look back in years to come. I also means that I can moan in this one and write a soup recipe in the other post.

Despite my commitment to earlier rising I managed to roll over and go back to sleep after Julia got up. This is becoming a habit and something I need to avoid. It started as a matter of practicality  – I would let everyone else in the house use the bathroom and dress before rushing round, eating breakfast prepared by Julia and then giving her a lift to work.

It has, over the years, become less a matter of practicality and more a matter of laziness. I am also finding, with having arthritis, that it isn’t so easy to rush in a morning. I used to resemble a meercat, bright and busy, but I now move like a tectonic plate. The grating in my knees and back adds to the impression of geological motion.

My back has been particularly bad for the last three days and I’m having trouble getting around. I am using my stick even to get round the house. Last week I had trouble with my knees and ended up wearing a knee brace. I seem to be falling apart by installments.

When I finally creaked downstairs the post had already been and I had a letter about a telephone consultation with rheumatology. I’m beginning to wonder why we can’t always do it by phone, apart from blood tests and X-Rays. Later in the day I had a phone call to tell me the blood tests results were OK and I could start taking the Methotrexate. This was an exact copy of the call I had yesterday, They are trying to patch a service together using part-time staff and staff out of retirement, and there are a few rough edges. On the other hand, it’s not a great problem to get an extra phone call – it’s a lot better than not getting the results at all, which, unfortunately, has happened in the past.

The Methotrexate has several side effects, and I think I may have one of them as my stomach is giving trouble. After taking the pills last night (you take six on one day and then take a vitamin pill on the other six days) I did not feel very well. On the other hand it may be coincidence. The vitamin pills are to help counter some of the drug’s side effects. You know you have problems when you have to take pills to protect you from the other pills you are taking.

If I had my life over again I would look after my health and my money more sensibly. And my wife.

I made soup for lunch, which I have already written about.

Later I went online and finalised my grocery order. We have a Click & Collect order to pick up tomorrow and, as it’s difficult to order groceries two weeks in advance, it needed quite a lot of alteration. You have to secure a slot as soon as it becomes available and worry about the details later.

I did put in an order two weeks ago and haven’t been able to alter it until now. The original order had 19 items and they were unable to supply five of them. I cancelled some things and added others. When I went to checkout I found four of the items were out of stock, including the flour. Twenty minutes and they were already cancelling things…

I went back to the flour to look for alternatives and there were none, However, they were still showing my original selection to be in stock. I thought I’d order it again just to check. It was out of stock when I got back to checkout. I am thinking bad thoughts about ASDA.

Six weeks after the panic buying and I still can’t buy flour. I also had trouble with eggs, baked beans and tinned chickpeas. Makes you wonder about the “robust supply chains” they claim they have.

The ASDA site even asks if you can go round the shop instead of using the delivery or collection services. To be honest, no. If I do click and collect or delivery I meet one or two people, who keep well away from me. Mathematically that’s a lot better than walking round a shop full of people who walk too close.

I’m not a great worrier, but I’ve decided on a strategy and I’m going to keep to it.

Stir Fry Crazy

I backslid yesterday morning and went shopping on the way back from the hospital. I’ve let things slip a bit on the kitchen logistics and am short of a few things. This does not include carrots. We have enough carrots to eat them every day for the next week. In fact, we are going to have to eat them every day to make sure we get through them.

Julia made tea last night. I bought a bag of beansprouts while I was in the shop because they called me as I walked past. This was one of the high points, as were the four fresh rolls, the packet of ginger biscuits and the bunch of flowers. They didn’t have any decent marmalade, I didn’t see any mustard and there was, as usual, no flour.

It was tricky shopping because it was a spur of the moment thing and I didn’t have a list. I didn’t actually forget anything, but I did fail to find a few things that were probably there, such as the mustard. It was probably somewhere in the shop but it was Aldi and the aisles are narrow so going back would entail passing too close to people. At the best of times you get too close to people in Aldi, and there were several people shopping who didn’t seem too bothered about maintaining a proper distance.

I probably shouldn’t have gone shopping because we could have lasted until next week, but I’m beginning to crack under the pressure of lockdown. I did want a few supplies, and I did want to get something for Julia but I also, I admit, wanted to do something normal like shopping.

As you may be able to tell from the header picture, there is a possibility that Julia is feeling the pressure too. Look past the luscious fresh vegetables and the delicious chilli tomato sauce. Where, I ask, are the noodles you would normally expect with a stir fry? It did taste good with pasta, but it was a bit of a surprise.

I think the lockdown is starting to get to all of us in different ways…

 

Notes for Posterity

Yesterday was probably rock bottom. I simply sat round doing very little and, just after midnight, I realised that I’d failed to post. In fact, I’d failed to do anything much.

I say it’s probably rock bottom, but I can’t guarantee this – there is always the chance it could be worse. At least I was still wearing trousers. I have a couple of pairs of jogging bottoms upstairs, so there is still potential to sink further.

Today I am wearing trousers and have already accomplished more than I had done by this time yesterday.

We did pop out yesterday afternoon, going to TESCO for our Click & Collect order. The system was slightly different from the one last week. We had to travel to Toton last week. They have a small building, two men and you load your own shopping. We went to Top Valley yesterday – they have a canopy with a van parked under it, one man and he puts it in the boot for you while you sit in the car.

It only took 20 minutes and we only had contact with one man. It’s not a bad method of shopping. However, it did have one drawback as there were several items lacking. They take your money, they confirm they have it, they clearly have it in stock, but they don’t have a system for turning this into reality.

There was no flour. There was no bread kit. There was no marmalade. I have no clue why there should be a shortage of marmalade. There was plenty last time I shopped, and plenty of variety when I shopped online. I think we are looking at a failure in substitution rather than a failure in supply.

I bought white rolls, to make bacon cobs, which arrived squashed, which was disappointing. Even worse, the Belgian buns arrived crushed. I’d bought them as a special, sticky treat and was much put out when they arrived with the icing spread all over the packaging.

It’s yet another downside of shopping by remote control.

Despite this I still checked for a delivery slot on the internet. It’s become a habit, possibly even a fixation. And, again, after several disappointments, I managed to find a delivery slot at ASDA. It’s for 5th May, which is only 5 days after my previous slot, but beggars can’t be choosers. I could, in theory, have left it for someone else, and waited to see if I could get one for the 7th. However, nobody seems to have bothered leaving one for me over the last month, and they have been buying all the flour, so I pressed the button.

It’s nice to think that the current difficulties will make us all better people but I’m not sure this is going to be the case with me. The fact that I avoided panic-buying and bought modestly for the first few weeks of the shortages did not leave me with a good feeling. I should have felt good about my self-restraint, or at least felt neutral about the whole thing. But I didn’t. I felt vulnerable, short of food, and that all the smug, well-stocked panic-buyers, were, as usual, nicely placed while the rest of us suffered. At that point, if someone had suggested a re-run of the French Revolution, I would happily have joined in.

I’m not sure, after several weeks of stocking up, we actually need any more food. The fridge is rammed, we have tins balanced on shelves and I’m struggling to use carrots quickly enough.

As I said to Julia, it’s like shopping for Christmas. Over the years I have managed to hold things back so I only buy twice the food we need for the two days, but the last few weeks have weakened my self-discipline and I have bought too much of some things. I have too many vegetables and too many tins of things like Spam, haggis and corned beef, but I don’t have enough bread or marmalade, and I ran out of English mustard last night. I forgot all about ordering more so unless I find some in the back of a cupboard I’ll have to eke out the last quarter jar of Dijon, which is OK, but doesn’t make your eyes water. Mustard isn’t as much fun without the danger.

The pictures below are basically just weeds in what passes as a front garden – a poppy that had already started to fall apart by 2pm, red valerian that is budding up, and a dandelion. When the best flowers in the garden are dandelions you realise quite how much you have let things slip.

 

Lockdown Cookery

There are, I’m pleased to say, signs that the grocery situation is easing.

I managed to book a Click & Collect slot at ASDA on Saturday afternoon. It’s for April 30th, which left me with a trip to the shops this week.

Or did it?

Browsing the TESCO site revealed some Click & Collect slots for Monday. I suspect they are putting them on at random to spread them round a bit. Or to annoy me. It could be either.

I will be collecting an order tomorrow afternoon, which is awkward because it leaves a 10 day gap, but is handy because it avoids a walk round the shop. After what happened last time I can do without people invading my personal space. I’m not saying that isolation is bad for me, but I’m turning into a recluse. I nearly said “Howard Hughes” there, but didn’t want people to get confused and think I was building an aeroplane in the back garden, craving banana nut ice cream or storing my urine in bottles.

You still can’t get ordinary flour or various random vegetables. Calabrese seems to be off the shelves for the second time in three weeks (that’s purple sprouting brocolli on the plates in the pictures), though courgettes are back.

The problem with flour is that although we have plenty, and the mills are running round the clock, it takes so long to bag it up in small bags that they can’t keep up with demand.

Ah well, I haven’t baked for the last three years, so I can probably survive without flour a bit longer.

Cauliflower Steaks

I cooked cauliflower steaks for tea – not a vegetable disguised as meat, just a cauliflower cut in a slab.

First trim the leaves and stalk, then cut it half. From each side, cut a piece about an inch to inch and a half wide. If it’s a big enough cauli, and you aren’t bothered about your fingertips, you can possibly get another steak out of each side. I didn’t. Tomorrow we will be having cauliflower cheese.

Oil a roasting tray, put the steaks in it, oil and season the top (I used a reasonably conservative sprinkle of cumin and black pepper) cover the tray with foil and cook in a high oven (250° C) for 10 or 15 minutes. This steams it. Then remove the cover, turn it over, season and cook for about 8-10 minutes a side. You might be able to get away with turning it once, when you uncover it, but the recipe left room for doubt so I turned it twice. It needs to be seared to look the part.

We served it with nut cutlets from the freezer, which were very pleasant. Julia thought the meal might be a bit bland without the cutlets, but I thought the cauli was OK as the main item. I served it with cheese/mustard sauce, though there are other sauces and flavourings. I may experiment with other seasoning in future, though it’s a big chunk of vegetable, and my digestive system is currently gurgling hard.

Adventures with a Pan

We had smoked mackerel pate for lunch yesterday. That involved the use of the food processor, so, for me, was a real technical challenge. I had to ask Julia to dismantle it at the end, because I can never work the catch that releases the bowl. You would have thought that in the 21st Century they would have thought of making this obvious.

Smoked Mackerel Pate

It was a simple recipe, involving two bits of smoked mackerel (about 200 g) and half a pack of cream cheese. I pulled the fish off the skin and broke it up, added the green bits from a large spring onion, a big spoonful of wholegrain mustard, some black pepper and then gave it a whizz in the food processor. Then I opened it up and pushed the big bits of fish down into the mix before having another go. I think that if I’d broken the fish up more I could have omitted that last step. I will aim for pieces about the size of a finger top joint next time – some of the ones I tried were nearly the size of my thumb and managed to ride up to avoid the blades. People often use horseradish, as it is traditional with mackerel, but I didn’t have any so I tried mustard and it seems to have worked.

I’m saving the last lime to make an avocado dip, so didn’t use any citrus, but it didn’t seem to make a difference – the mustard and spring onion gave the mix a good, fresh taste without citrus.

We ate it with toast. There was plenty of pate for four thickly spread rounds of toast.

Today’s lunch was vegetable soup with warm rolls and smoked mackerel pate. The rolls were Paul Hollywood part baked rolls and there was enough pate left to be generous, though the rolls weren’t exactly huge.

The soup recipe was four manky carrots (though I suppose good clean ones would be just as good), a chunk of swede (rutabaga) that was starting to change colour at the back of the fridge, the potato offcuts from the oven-baked chips (keep reading for details of them) and some leftover peas. Boil it up with water and a stock cube, reduce to soup with a hand-blender, season, eat. It probably needed onions but we only have enough to last until the next shopping trip so I left them out. I also added garlic from a jar, but should have put more in as we couldn’t really taste it.

Yesterday’s tea (sorry to wander about so much), was chunky oven-baked paprika chips,  with fish fingers and mushy peas. It’s not great food, but it is a change as we haven’t had fish fingers for a month. I arranged them like something off Masterchef for the photo. I’m not sure it looks any better than throwing a pile of food together. It just looks like an idiot has been playing with his food.

As they were cooking, I made a pot of curry (chickpea and sweet potato – using a base of last night’s chilli) and the previously mentioned soup.

Tomorrow I will use the rest of the cream cheese in a charred red pepper dip and we will also have an avocado dip using the lime I saved by not using it in the pate. It can be quite tricky cooking when you can’t nip out to the shops.

 

 

 

Burnt Aubergine Vegetarian Chilli

We had Burnt Aubergine Chilli tonight. It’s not the first time that the word “burnt” has entered the conversation about my cookery, along with its synonyms – charred, scorched, over-cooked, cremated, incinerated and inedible. It is, however, the first time I’ve it’s been a deliberate choice.

The recipe is ‘low fat and four of your five a day,’ according to the website.

I didn’t quite follow the recipe – life is too short to cut carrots into tiny cubes, but I did use tinned tomatoes, red kidney beans, green lentils, onions and aubergine. As I recall, you can only count the beans and lentils as one portion, and it’s possible we have to discount the onions as not being a full portion. Call it 3½ portions, even without the carrots.

It wasn’t great, but to be fair to the recipe, I used it as a guide rather than a recipe.

I missed out the carrots because I’m lazy and some of the soy sauce because I’m an idiot (I forgot that a tablespoon is the really big one, not a dessert spoon – I’m always doing that). To be honest, I’m not sure that missing out a few mls of soy sauce was the main problem.

I also missed out the red lentils (replaced with extra green ones), the coriander and the cinnamon because I didn’t have any. (It turns out we did actually have cinnamon but ‘men can never see anything even when it’s straight in front of them’). Again, I’m not sure that missing out a few sprinkles of spice was a major problem.

The major problem may well have been that I was hungry, so I omitted the 800 ml of stock and most of the cooking time. I was using tinned lentils so it wasn’t as if they needed a lot of cooking. This may have deprived us of a great deal of flavour and texture. Or it may just have meant we ate sooner.

It was, as I say, not great. The spicing was quite hot, though acceptable by our modest standards, and the flavour was not as good as I would have liked. On the other hand, it wasn’t bad either. In truth, I’ve never really rated vegetarian chilli so I wasn’t particularly disappointed by the result. I will try it again and see how it goes.

The scorching of the aubergine skin, done using the garden flamethrower, did not produce the smoky flavour I was hoping for, though the discarded skin smelt reasonably smoky as it went into the compost. I was hoping for something spectacular for the photographs, but the camera seemed to filter the flame out.

Another problem is the chocolate. I used some of Julia’s hoard of 80% dark chocolate, thinking that if something is doing it is worth doing properly. It didn’t add anything to the taste, but when I mentioned it, it did add something to the conversation. I won’t go over the entire discussion, but Julia isn’t happy about the idea of me throwing her decent chocolate into a chilli. From the note of indignation in her voice you’d have thought I’d been using puppies, not chocolate.

 

 

 

Rhubarb, Ratatouille and a Recipe

The main feature of the day has been the succession of texts and phonecalls.

The first one, from an unknown number, was a bit of a worry as there is always a chance that it is bad news. Once I found out it wasn’t bad news I decided that it’s nice to know there are people out there, despite the isolation. Several of the calls have been people checking to make sure we have everything we need, which is comforting, though it does make me feel old.

I am now watching TV, blogging and breathing in the comforting scent of rhubarb crumble as it cools in the kitchen.

I am mentally preparing myself to cook tea. It’s not that cooking tea is difficult, but as I’m doing a roast it has to be at least as good as the one Julia made a couple of days ago. It’s the same meat, warmed up, but the trimmings all need doing and it won’t do to make a mess of things or she will mention it several times a day for the next week.

Rede Crested Pochard – Arnot Hill Park

We will be having carrots (because I have bought too many recently), parsnips, sprouts, broccoli and asparagus. We don’t usually have asparagus, but variety is good for us and I threw it in the basket without thinking about what it would go with.

That’s the problem with lockdown, you have to spend so much time planning your food. I was very well organised at one time but after moving to the city and being near a supermarket that was open 24 hours (apart from Sunday) I have let things slip. It has been hard getting them back in line and, with some groceries being short it has been tempting to put a little extra in the basket.

First, there is the menu for 7-10 days, then there is working out the shopping list, ensuring that things won’t go off and actually getting into a shop. At that point you have to hope you can get everything you need, make substitutions, and resist the temptation to add too many snacks. I think I may have covered that before, when talking about the cake and biscuits that found their way into my basket on Wednesday.

Julia is managing to keep her exercise routine up by gardening, working out and running on the spot. My regime of lifting the remote control, walking to the kettle and a little light typing, is not quite so healthy, though it seems to work for me. That’s why I need to cut down on snacks and resist the cake.

Tufted Duck – Arnot Hill Park

Tomorrow I am going to cook a pan of carrot soup. I really have bought too many carrots.

I’m also going to look at a recipe for Burnt Aubergine Chilli Number One Son sent me. It involves, as you may guess, burning an aubergine. Gas will do nicely, according to the recipe, and a barbecue will give it a nice smokey flavour. The recipe is strangely uninformative about the likely results using a garden flamethrower to do the charring. No doubt it will make for an interesting experiment for the middle of the week.

It’s about time to vary the menu. In fact, if the lockdown is extended for another couple of weeks, it is essential. Much more ratatouille and I’m likely to have a meltdown. We will be having it tomorrow (ratatouille, that is, not a meltdown), and I’m looking on it as a penance rather than a meal. Crumble, on the other hand, is always a pleasure. I will finish now as it’s time to eat.

Lockdown Trivia

Just a few things that may escape future historians.

We lost our first potato yesterday. Julia put her hand in the bag and winced as she found a rather squashy potato. This is not good, as I have just been saying that we have avoided food waste. I don’t like waste, and I particularly don’t like waste when I’ve just been telling people how well I’m handling the situation.

Shortly after that I spotted mould on the sliced loaf we are using. That’s the problem with buying bread and trying to eke it out for a week. You either end up with dry bread or mouldy bread. I will take the affected slice out and hope that Julia doesn’t spot it.

We will now use the loaf from the freezer and replace it on Wednesday.

We are doing the best we can, only going out once a week or ten days for food. Unfortunately, the doctor and pharmacist call us out, even though we’d rather not go. The neighbours aren’t trying quite so hard.

One set is particularly annoying. They had a friend round two days ago to help with some work in the garden, and then they had family round yesterday.

It’s difficult not going out, and time-consuming to plan our eating so that we only shop every week or ten days, but we are doing it. We don’t want to be responsible for infecting anyone or over-loading the NHS and, despite feeling indestructible most of the time, I don’t want anyone to give it to me. I don’t mind having it, but I’d prefer to wait until it becomes less crowded in hospital.

I could ring the police, or use the on-line form the police are now using, but I don’t really want to go down that route. It’s bad enough being in the middle of a lockdown without having the additional burden of becoming a police informer.

Mencap Garden in Spring

Three weeks ago we were advised against travel, two weeks ago we were locked down and this week I’m having to wrestle with the concept of reporting my neighbours for having family round for Easter. It’s like something out of the old Communist Bloc.

A few hours ago I watched news footage of mass graves in New York. It feels like watching something from the Great Plague rather than something I’m living through. I’m hoping, that all the bloggers I know over there will stay safe. I don’t think I know any from Kansas, but if I did I’d be really worried, as the State Governor is going to court to stop the State Legislature overturning her decision on limiting church services over Easter.

I thought our politicians were bad, but this is descending to a new level. If the Pope and the Archbishop of Canterbury are happy to stream their Easter services from empty churches, I don’t see why it isn’t good enough for Kansas.
